Almond Paste (for Kings cake/Galette)

Almond paste concentrate enough for one cake/galette


– 100g of soft butter

– 100g of sugar

– 100 g of eggs (about 2)

– 100g of almond powder

– 1 pinch of flour

– 1 teaspoon of rhum or vanilla extract


  1. Mix the butter and the sugar with a whisk (manual or electric)
  2. Add the eggs and whisk until it double in size
  3. Add the almond powder, flour and the Rhum or Vanilla extract. Mix until well incorporated
