Fast Wok Recipe (Veggies-only)

For all those lazy or time bound people, here is my fast wok recipe. You can prepare the veggies a few months in advance and have a stock in your freezer for when you need it.

For 5 individual meals of 1 person


  • 5 tomatoes
  • 1 aubergine
  • 2 big onions


Pre-cut all the ingredients in cubes of around 1cm each and divide them equaly into individual plastic bags: one handful of onion, aubergine and tomato in the same bag. Put the ones, you will not use in the fridge or freezer. In the fridge, you can keep them 2-3 days max.

If you are going to use it directly FRESH, add oil (coconut oil is recommended) in your pan on medium-high. Once your oil is hot, add all the bag of vegetables to the pan and keep stirring to avoid the tomatoes burning. Cook it until the onions are brown and that the aubergine is soft.

I have several ways of enjoying this wok:

  • Add tomato sauce, oregano, basilium, salt/peper and pour it on top of pasta or rice
  • Add herbs like thym or Rosemary, salt/peper and eat it on a toasted bread with a little olive oil like bruschetta.
  • And many more…Just try and see what works for you… This recipe is endless!
